“The Waitress’s bags are red”
This refers to the bags of “one waitress” because the apostrophe is before the “s” at the end.
(Waitress’s)
“The Waitresses’ bags are red” this refers to the bags of “more than one waitress” (plural).
Because the apostrophe is after the “s”

If a word is plural (brothers) for possessive, you just add the apostrophe after the “s” but you don’t add another “s” like “brothers’s”.
If a word is singular (brother) you just add “ ‘s “ (brother’s)

brothers’s -> ending with -s
